Egg Noodle Casserole

My kids LOVE egg noodles, and they love mac n cheese... but my 4 yr old suddenly doesnt love veggies or anything green.... so i came up with this casserole. which is also great if you already have left over ham (which i did bc i had just made a ham 2 nights ago).. its delicious and so easy!!!!

1 package egg noodles
1 large can of cream of mushroom soup (26 oz)
1 1/2 cups milk
salt & pepper
cubed ham (u decide how much or how little)
1 small onion (i used white)
1 grated carrot (or peas if your kids like green things)
3 tbsp butter
2 cups shredded cheese (i used cheddar)
1 sleeve ritz crackers
13x9 baking dish

boil water, cook egg noodles according to pkg directions

in a separate pan, take 1 tbsp of butter, melt it and saute the onions, carrots and ham.
in another small pot or pan, mix the soup, salt, pepper and milk... heat until bubbly.
When the onions, carrot and ham are sauteed, combine with the soup mixture. add the cheese, heat until bubbly.
combine cheesy soup & ham mixture w/ egg noodles and transfer to 13x9 baking dish..
crush crackers, and in a bowl, mix with 2 tbsp. melted butter. top casserole with buttery cracker mix.
bake in 350 degree oven for 30 minutes.
